Zoodles & Meatballs

To compliment the zoodles that the Hubby and I made, I decided to go for meatballs! Just because we're going Paleo doesn't mean we can't fake out and make some of favorite meals does it? Of course not.

One of the great revelations that I've had reading labels is that some of the food that we eat was actually *gulp* healthier than we thought. Take for example Costco's Kirkland brand Marinara Sauce which has the follow ingredients in it: Tomatoes, water, tomato concentrate, onions, garlic, basil, sea salt, EVOO, oregano and citric acid. Please try to check out the ingredients list for barilla, prego, ragu & even neumann's own at the grocery store. Interesting ingredients for marinara sauce!

Zoodles & Meatballs

1 lb grass-fed ground beef
1 Tbsp coconut oil
1 jar Costco Kirkland brand Marinara Sauce
2 Tbsp Balsamic Vinegar
1 Batch of Zoodles

Season the beef with your favorite seasonings, we do sea salt and petter
Heat 1 Tbsp coconut oil in Skillet
Ball up ground beef and drop the mini meatballs into your skillet
Let the ground beef create a crust before flipping, about 2 minutes
Let the ground beef create a crust on the opposite side, about 2 minutes
Add jar or marinara sauce
Reduce to low simmer and let reduce down for 15 minutes
Add Balsamic vinegar and stir
Let reduce down for 5 more minutes before serving

Oodles of Zoodles

This recipe is ALL over the internet so I had to give it a try. I purchased a Miu julieene peeler from Amazon and made these zoodles as soon as they came in.

I washed the zucchini, cut off the ends and then started to peel away. It's similar to using a vegetable peeler except the wast from the vegetable peeler is beautiful strands of veggies wit this peeler.

Depending on if the Hubby and I stay on this pale kick, will dictate if I take the next step into zoodle-ing and purchase this contraption that everyone swears by.

Caramelized Onions (without Fat)

Going Paleo has been more about planning than anything else. I don't like to pre-plan dinners but I feel like I have to now. Tonight was a LAZY night for me after 90 minutes of sweating to the oldies also known as Bikram yoga.

Tonight's dinner is Grass-Fed Steak with caramelized onions and a baby kale salad with balsamic vinegar.

I have been reluctant to use coconut oil for cooking vegetables so I've been using non stick pans and water as the oil substitute. Weird, I know. But trust me... This works!!
